ULTRA GREEN TOMATO MINCEMEAT OF DOOM Mk MCCCLXIV with LIMITED EDITION LASER BEAM ATTACHMENT
GREEN TOMATO MINCEMEAT
8 cups / 2 L – finely chopped green tomatoes (20 medium)
4 cups / 1 L – finely chopped peeled apples
3 cups / 750 ml – raisins and other dried fruit
½ cup / 125 ml – chopped citron or mixed peel
1 tsp / 5 ml – salt
2 tsp / 10 ml – cinnamon
1 tsp / 5 ml – ground cloves
½ tsp / 2 ml – ground allspice
1 cup / 250 ml – lightly packed brown sugar
1 ½ cups / 375 ml – granulated sugar
1/3 cup / 75 ml – cider vinegar
2 tbsp / 25 ml – lemon juice
1 cup / 250 ml – apple juice or water
½ cup / 125 ml – brandy
In a large saucepan, combine all ingredients except brandy. Set over medium-high heat and bring to boil; reduce heat and simmer gently for 1 ½ hours, stirring often. Remove from heat. Add brandy. Pour into hot sterilized jars. Seal, cool and label. Store in cool, dry, dark place. Makes about 7 cups (1.75 L).
I’ve never actually used the Brandy (I’ve never had any at that time of year). A 500ml jar is the perfect size for a 2-crust pie.
